Ingredients (Serves 4)

Base:

  • 2 medium sweet potatoes, peeled and diced (~3 cups)

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 3 cups vegetable broth

  • ½ cup coconut milk (or other unsweetened plant-based milk)

  • 2 tbsp unflavored pea protein powder (can increase to ¼ cup for higher protein)

  • Salt & black pepper, to taste

Seasoning:

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp turmeric (optional)

  • Pinch of chili flakes (optional)

Optional Toppings:

  • Toasted pumpkin seeds or sunflower seeds

  • Swirl of tahini or coconut cream

  • Fresh herbs (parsley, cilantro, or chives)

  • Drizzle of chili oil or olive oil

Instructions

  1. Sauté Aromatics
    Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 4–5 minutes until translucent. Add garlic and sauté for 1 more minute.

  2. Add Sweet Potato & Spices
    Stir in sweet potatoes, smoked paprika, cumin, turmeric, chili flakes, salt, and pepper. Cook for 2–3 minutes to bloom the spices.

  3. Simmer
    Add vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15–20 minutes, or until the sweet potatoes are soft.

  4. Blend
    Use an immersion blender directly in the pot, or transfer soup in batches to a blender. Blend until completely smooth.

  5. Add Coconut Milk & Pea Protein
    Stir in coconut milk. Sprinkle in pea protein powder while whisking to prevent clumping. Simmer for 3–5 more minutes until thick and creamy.

  6. Taste & Serve
