Chocolate Chip Protein Cookie
1 Scoop Nutrasumma Vanilla FPP
2 Tbsp Peanut Butter
1/3 Cup Unsweetened Silk Cashew Milk (or more if needed)
1/2 tsp Baking Soda
1/2 Cup PB2 Powder
2/3 Cup Bob's Red Mill's Oat Flour
1/4 Cup Coconut Sugar
5 Tbsp Mini Chocolate Chips
1.Mix together all ingredients in one bowl. The dough will be very wet and sticky even when fully mixed.
2. Using a tablespoon measurement, place dollops of cookie dough on cookie sheet. Use your fingers to make the dough into a more rounded shape if you want more round cookies.
3. Bake at 350F for approximately 7-8 minutes. The cookies may seem a little undone to touch but they will harden as they cool. If you like a more muffin-like cookie then bake for an additional 1-2 minutes.
