Protein Falafel
Ingredients:
1 can cooked chickpeas (15 ounces; about 1½ cups), drained and rinsed
1½ cups chopped kale (or other greens)
1 cup chopped parsley or cilantro
1 scoop of unflavored Nutrasumma's pea protein
½ cup chopped yellow or white onion
2 tablespoons lemon juice
2 medium cloves garlic, finely chopped
2 teaspoons ground coriander
2 teaspoons ground cumin
1 tsp of paprika
Directions:
1. Mix all ingredients together and make into a ball (makes about 8-10) and lay on baking sheet.
2. Preheat oven to 375 degrees
3. Bake for 20 minutes then flip and bake for 8 minutes
4. Enjoy!
